Prepare the Pan: Heat 1 1/2 tablespoons of oil in a kadhai or pan over medium heat. Once the oil is hot, add the mustard seeds and let them splutter.
Add the Tempering: Toss in the cumin seeds, asafoetida (hing), and curry leaves to flavour the hot oil.
Sauté the Onion: Add the finely chopped onion. Roast it well until it turns a lovely golden brown colour.
Mix the Aromatics: Add the freshly crushed ginger, garlic, and coriander mix. Sauté for about 1 minute until the raw garlic smell completely goes away.
Cook the Tomato: Add the chopped tomato along with salt to taste. Sauté for another 1 minute until the tomato softens slightly.
Add the Spices: Turn the gas flame to low. Add the Kanda Lasun Masala, garam masala, and turmeric powder. Mix the dry spices beautifully with the onion-tomato base.
Coat the Beans: Add the chopped long beans to the pan. Mix thoroughly for 1 minute on low heat so the masala coats the beans evenly.
Simmer and Cook: Pour in 1/4 cup of water if you are in a hurry. Cover the pan with a lid, leaving a tiny gap for extra steam to escape. Let the Chavali Shengachi Bhaaji recipe cook on low heat for 10 to 12 minutes. Check and stir once halfway through.
Final Touch: Once the beans are perfectly tender, add 1 tablespoon of roasted peanut powder for extra texture and flavour. Give it a final stir and turn off the heat!
