- 5 large ripe Mangoes
- 2 tablespoons Rock Sugar Mishri or Khadi Sakhar
- 2 green Cardamoms Elaichi
- A tiny pinch of Nutmeg Jaiphal
Soak the Mangoes: Start your Aamras Recipe by soaking the whole mangoes in clean water for 1 to 1.5 hours, then wash them thoroughly.
Chop the Mangoes: Cut off the top stem of the mangoes and slice them into large pieces.
Prep the Rock Sugar: In a small mixer jar, add the rock sugar, cardamoms, and a tiny pinch of nutmeg. Grind it into a fine powder. (Make sure to remove any inner thread from the rock sugar after grinding).
Extract the Pulp: Place a Puran strainer (a traditional wire mesh sieve) over a large mixing bowl.
Sieve for Smoothness: Press the mango slices flesh-side down against the sieve. Gently rub the mango pieces to push the pulp through the strainer. The skin and fibres will stay on top, giving you smooth and lump-free mango pulp in the bowl below!
Mix the Sugar: Add 2 tablespoons of your prepared rock sugar and cardamom powder to the fresh mango pulp.
Stir Well: Mix everything thoroughly with a spoon until the sugar dissolves. There is absolutely no need to use a blender for this recipe!
Chill and Serve: Place the sweet mango pulp in the refrigerator for a short while, and your fresh homemade Aamras is ready to serve!
