Authentic Mirchicha Kharda Recipe: Easy Maharashtrian Chutney

Ingredients
  

  • 10 to 12 light green mild chillies cut into 3 pieces each
  • 1 whole garlic bulb cloves separated and peeled
  • 1/2 teaspoon cumin seeds
  • Salt to taste coarse sea salt is highly recommended

Instructions
 

  • Heat the Skillet: Place an iron tawa (skillet) on the stove over medium heat. Let it get nice and hot.
  • Roast the Chillies: Add the chopped green chillies to the dry skillet. Do not use any oil. Dry roast them until you see dark, blistered spots on the chilli skins.
  • Add the Garlic: Toss the peeled garlic cloves into the pan with the chillies. Sauté them together until the garlic also develops brown, roasted spots.
  • Toast the Cumin: Sprinkle the 1/2 teaspoon of cumin seeds over the hot chillies and garlic. Toast for a few seconds until fragrant, then turn off the heat and take the skillet off the stove.
  • Add Salt: While the mixture is still very hot, sprinkle coarse sea salt over it. Coarse salt helps in creating friction, making the crushing process easier and tastier!
  • Crush the Mixture: Using the flat base of a stainless steel glass or a traditional metal pot (tambya), press down and crush the chillies and garlic directly on the iron skillet.
  • Serve Fresh: Keep crushing until you achieve a coarse, rustic texture. Your Authentic Mirchicha Kharda Recipe is ready to serve!
