Boil the Beans: Start your Chatpatit Farasbee Recipe by boiling the trimmed green beans in water with a pinch of salt for 3 to 4 minutes. Ensure the beans are tender but still retain a nice crunch.
Drain the Water: Once boiled, drain all the water from the beans completely and set them aside.
Heat the Pan: Place a thick-bottomed pan or kadai on the stove. Add a little oil first, followed by the butter. Adding oil prevents the butter from burning.
Sauté Garlic and Chilli: Once the butter melts, add the crushed garlic and green chilli. Sauté lightly until the garlic gets a beautiful golden colour. Be careful not to burn the garlic!
Add the Beans: Toss the boiled green beans into the pan and mix everything well so the butter coats the beans.
Season the Dish: Add the freshly crushed black pepper and a very small pinch of salt. Remember, the butter and the boiling water already contain salt, so adjust carefully.
Roast on Low Flame: Keep the gas on low and sauté for about 2 minutes until you see light roasted spots on the green beans.
Add Lemon Juice: Squeeze 1 tablespoon of fresh lemon juice over the beans and give it a quick mix.
Garnish and Serve: For an extra kick, sprinkle a little chaat masala on top, serve hot, and enjoy your spicy garlic green beans!
