Step 1: Crack the Fruit: Take your ripe Bael fruit and gently tap it against a hard surface to crack the outer shell.
Step 2: Scoop the Pulp: Open the cracked shell and use a spoon to scoop out all of the soft, sweet pulp into a large mixing bowl.
Step 3: Mash by Hand: Add a little chilled water to the pulp. Thoroughly mash the pulp using your clean hands to separate the seeds and fibers from the soft fruit.
Step 4: Strain the Mixture: Place a strainer over another bowl and pour your mashed mixture through it. Press down well to extract all the smooth juice and discard the seeds.
Step 5: Sweeten the Juice: Add the powdered rock sugar (mishri) to the strained juice. Since the fruit is naturally sweet, you won't need too much.
Step 6: Add Flavour: Mix in the roasted cumin powder and a pinch of black salt for a wonderful flavour twist.
Step 7: Adjust Consistency: Add more chilled water to get your desired juice consistency and stir well until the sugar is fully dissolved.
Step 8: Garnish and Serve: For an extra punch of freshness, you can add a squeeze of lemon juice or some freshly chopped mint leaves before serving. Enjoy it chilled!
