Step 1: Heat the Oil. Place a pan or an iron tawa on the stove and heat a little oil over medium heat.
Step 2: Add Spices. Once the oil is hot, add the mustard seeds, cumin seeds, a pinch of hing, and the curry leaves. Let them sizzle and release their aroma.
Step 3: Sauté the Onions. Add the sliced onions to the pan. Roast them well until they soften and get a nice colour.
Step 4: Cook the Tomatoes. Toss in the sliced tomatoes. Sauté everything together on a medium flame for about 1 to 2 minutes.
Step 5: Add the Seasoning. Add salt to taste, turmeric powder, and the Kanda Lasun Masala (or red chilli powder). Mix the spices thoroughly into the onion and tomato base.
Step 6: Add the Potatoes. Put the sliced potatoes into the pan. Stir well for 2 to 3 minutes on a medium flame so the potatoes are completely coated with the delicious masala.
Step 7: Steam Cook. Turn the heat down to low, cover the pan with a lid, and let it cook for 5 to 7 minutes. The steam will perfectly cook the potatoes. (Tip: If your pan has a thin bottom, open the lid and stir once in between to prevent sticking!)
Step 8: Garnish. Once the potatoes are beautifully cooked, remove the lid, sprinkle freshly chopped coriander leaves on top, and give your Batata Tomato Recipe one final gentle mix.
