- 300 g Dodka / Ridge Gourd
- Paste: Coriander Leaves, 8-9 Garlic Cloves, 6-7 Green Chilli
- Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- A Pinch of Hing / Asafetida
- Curry Leaves
- 1 Onion Chopped
- 1/4 tsp Turmeric Powder
- 1 Tomato Chopped
- Salt to taste
- 6-7 tbsp Moong Dal / Split yellow lentils soaked for 30 minutes to 1 hour
Prepare the Ridge Gourd:
Check if the ridge gourd is tender by breaking it.
Cut off the ends and clean the ridge gourd.
There's no need to remove the ridges if the gourd is tender.
Grate the ridge gourd and do not squeeze out the water.
Prepare the Masala:
Coarsely crush the coriander leaves, garlic, green chillies, and cumin seeds in a mortar and pestle or a mixer.
Cook the Vegetable:
Heat oil in a pan.
Add mustard seeds and let them splutter.
Add cumin seeds, asafoetida, and curry leaves.
Add chopped onion and saute until golden brown.
Add turmeric powder and mix well.
Add the prepared masala and saute for 2 minutes on medium heat.
Add chopped tomato and mix well.
Add salt to taste.
Add the soaked moong dal and saute for 2 minutes.
Add the grated ridge gourd and mix well.
Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally.
Your Dodkyachi Bhaji (Ridge Gourd Sabji) is ready to be served.
