Healthy Veg Paneer Roll Recipe: Quick Kids Tiffin Idea

Ingredients
  

For the Creamy Spread:

  • 1 small block of fresh Paneer cottage cheese
  • 1 cube of processed Cheese
  • 8-9 Cashews kaju
  • 1/2 tsp Roasted cumin seeds jeera
  • 3 Black peppercorns crushed
  • 1-2 pinches of Sugar
  • Salt to taste remember cheese already contains salt
  • A handful of fresh Coriander leaves with stems
  • 5-6 fresh Mint leaves pudina
  • 4-5 mild green chillies roasted (or chilli flakes)
  • 2 tbsp Butter
  • 1 small bulb of Garlic roasted
  • 1/2 inch Ginger roasted

For the Veggie Filling:

  • 1 small Capsicum bell pepper, finely chopped
  • 1 small Carrot peeled and finely grated
  • Sweet corn kernels boiled with a pinch of salt
  • 1/2 Onion thinly sliced
  • 3-4 tbsp Cucumber peeled and finely chopped
  • Fresh Chapati or Roti small size

Instructions
 

  • Make the Base: In a blender, add your paneer, cheese, cashews, roasted cumin, crushed black pepper, a pinch of sugar, and salt.
  • Add Flavorful Herbs: Toss in the fresh coriander, mint leaves, roasted green chillies, roasted garlic, roasted ginger, and butter into the same blender jar.
  • Blend Well: Pulse the mixture into a thick, smooth paste. Do not add any water! Your creamy base for the Veg Paneer Roll Recipe is now ready.
  • Prepare the Veggies: In a clean mixing bowl, combine the finely chopped capsicum, grated carrot, boiled sweet corn, sliced onion, and chopped cucumber.
  • Mix Spread and Veggies: Add 1 to 2 tablespoons of your freshly blended paneer cheese spread into the vegetable bowl and mix everything evenly.
  • Assemble the Roll: Place a fresh chapati on a flat surface. Apply the vegetable and spread mixture generously across the centre, leaving a little space at the edges so it doesn't spill out.
  • Roll it Up: Tightly roll the chapati, pressing gently and tucking the filling in as you go.
  • Slice and Serve: Cut the roll into smaller bite-sized pieces using a knife or pizza cutter. Your delicious Veg Paneer Roll is ready for the tiffin box!
