Heat the Oil: Place a pan or kadhai on the stove over medium heat and pour in the oil.
Temper the Spices: Once the oil is hot, add the mustard seeds. When they start to pop, add the cumin seeds, asafoetida (hing), and curry leaves.
Sauté the Onions: Add the chopped onions to the pan. For a great Moong Dal Kanda Recipe, the onion needs to be cooked until it turns light golden brown.
Add the Paste: Stir in the freshly crushed ginger-garlic-coriander paste and sauté for about one minute until the raw smell disappears.
Cook the Tomatoes: Add the chopped tomatoes and cook for another minute until they soften slightly.
Mix in the Spices: Add your salt to taste, Kanda Lasun Masala, and turmeric powder. Mix everything well so the spices coat the onion and tomato base.
Roast the Dal: Add the freshly washed Moong Dal directly into the pan. Stir and roast the dal with the spices for a minute.
Add Water and Simmer: Pour in the water. If you want a dry "sukka" dal, use less water; if you want a gravy, add a bit more. Stir well and turn the heat to medium-low.
Cook to Perfection: Let the dal boil, then partially cover the pan with a lid. Allow it to cook until the dal is soft and tender.
Garnish: Turn off the heat and garnish generously with chopped fresh coriander leaves. Serve hot!
