Heat oil in a pan and add mustard seeds. Once they crackle, add cumin seeds, curry leaves, and green chillies.
Add sliced onions and saute for a couple of minutes until lightly golden.
Add crushed garlic cloves, asafoetida (hing), and turmeric powder. Mix well and saute for a minute.
Add the roughly chopped tomato and cook for two minutes.
Add salt to taste and mix well.
Add the potato pieces and mix well.
Cover the pan with a tight-fitting lid and cook on low heat for 5-7 minutes, or until the potatoes are cooked through.
Add cumin-coriander powder, chilli powder, and garam masala. Mix well.
Add coriander leaves and mix well.
Cover and cook on low heat for another 5-7 minutes to allow the flavors to meld.
