Prepare the Sabudana: Ensure the sabudana is well-soaked and fluffy.
Prepare the Potatoes: Peel, dice the potatoes into small pieces, and wash them thoroughly. Keep them in water until ready to use to prevent browning.
Prepare the Peanuts: Roast the peanuts on medium heat until crisp, then grind them coarsely. You can choose to remove the skin or keep it.
Heat the oil in a pan over medium heat.
Once the oil is hot, add the diced potatoes.
Saute for 2-3 minutes until they are slightly cooked and tender.
Add the green chilli paste to the pan with the potatoes.
Saute for another 2 minutes on low heat, allowing the flavours to meld.
Add the soaked sabudana to the pan.
Add the ground peanuts.
Mix everything well and cook on medium heat for 2-3 minutes, stirring continuously.
Add salt to taste and mix well.
Continue to cook on medium heat, stirring frequently, for another 3-4 minutes until the sabudana turns translucent and the mixture is well combined. The colour of the mixture will change slightly as it cooks.
Serve: Once cooked, the Sabudana Khichdi is ready to be served hot.
