Ingredients
  

  • 500 g Sabudana Sago/Tapioca Pearls (Soaked Overnight, at least 8 hours)
  • 250 g potatoes peeled, diced, and washed
  • 250 g Peanuts roasted and coarsely ground
  • 3-4 tsp Oil
  • 1 tsp Green Chilli Paste adjust to your spice preference
  • Salt to taste

Instructions
 

  • Prepare the Sabudana: Ensure the sabudana is well-soaked and fluffy.
  • Prepare the Potatoes: Peel, dice the potatoes into small pieces, and wash them thoroughly. Keep them in water until ready to use to prevent browning.
  • Prepare the Peanuts: Roast the peanuts on medium heat until crisp, then grind them coarsely. You can choose to remove the skin or keep it.
  • Heat the oil in a pan over medium heat.
  • Once the oil is hot, add the diced potatoes.
  • Saute for 2-3 minutes until they are slightly cooked and tender.
  • Add the green chilli paste to the pan with the potatoes.
  • Saute for another 2 minutes on low heat, allowing the flavours to meld.
  • Add the soaked sabudana to the pan.
  • Add the ground peanuts.
  • Mix everything well and cook on medium heat for 2-3 minutes, stirring continuously.
  • Add salt to taste and mix well.
  • Continue to cook on medium heat, stirring frequently, for another 3-4 minutes until the sabudana turns translucent and the mixture is well combined. The colour of the mixture will change slightly as it cooks.
  • Serve: Once cooked, the Sabudana Khichdi is ready to be served hot.
