Ingredients
  

  • Oil: 2 to 2.5 tablespoons
  • Garlic: 1 whole bulb cloves peeled and roughly crushed
  • Onion: 1 medium-sized thinly sliced lengthwise
  • Green Chillies: 20-25 light green mild chillies (cut into 3 pieces each)
  • Turmeric Powder: A small pinch for color
  • Regular Salt: To taste
  • Black Salt Kala Namak: A pinch for that tangy kick
  • Tomato: 1 medium-sized "desi" or country tomato sliced lengthwise; should be ripe but firm
  • Lemon Juice: 1 teaspoon
  • Chaat Masala Optional: Just a sprinkle for extra flavour

Instructions
 

  • Step 1: Heat the Pan: Place an iron tawa (or any heavy-bottomed pan) on the stove. Add 2 to 2.5 tablespoons of oil and let it get nice and hot.
  • Step 2: Sauté the Garlic: Toss the roughly crushed garlic into the hot oil. Fry it lightly—do not let it turn dark brown.
  • Step 3: Add the Onions: Add the thinly sliced onions into the pan and fry them gently along with the garlic until they soften a bit.
  • Step 4: Toss in the Chillies: Add your chopped green chillies to the mix. Stir everything well and roast for about 2 minutes until the chillies and onions get a slight char.
  • Step 5: Spice it Up: Lower the gas flame completely. Add a little turmeric powder, regular salt, and black salt. (You can also sprinkle some chaat masala here if you like.)
  • Step 6: Cook the Tomatoes: Add the sliced tomatoes and mix everything gently on low heat.
  • Step 7: Steam and Soften: Cover the tawa with a tight lid for 2 to 3 minutes. The steam will help the tomatoes soften beautifully without turning mushy.
  • Step 8: Add the Zing: Remove the lid, add exactly 1 teaspoon of lemon juice, and stir it well for another 2 minutes on low heat.
  • Step 9: Serve: Turn off the gas! Your delicious Mirch Tomato Side Dish is ready to be served.
