Ingredients
  

  • 1 Medium Onion: Finely chopped
  • 1 Green Chilli: Slit and cut into very thin pieces
  • 1 Cucumber: Finely chopped
  • 1 tsp Raw Mango Kairi: Peeled and grated
  • 1 Small Tomato: Finely chopped
  • 2 tbsp Fresh Coconut: Grated Olam Khobara
  • Fresh Coriander Leaves: Finely chopped
  • A Pinch of Chaat Masala
  • Salt to Taste You can also use a mix of regular salt and black salt
  • Powdered Sugar Pithi Sakhar: To taste
  • Optional: Roasted peanut powder Shengdanyache Kut

Instructions
 

  • Prep the Veggies: Start by finely chopping the onion, cucumber, tomato, and fresh coriander. Slit the green chilli vertically and cut it into very thin, small pieces so it mixes well.
  • Grate the Mango: Peel the skin off a raw mango (kairi) and grate about one teaspoon of it. This gives the Maharashtrian Koshimbir Recipe its signature tangy kick.
  • Combine Ingredients: In a mixing bowl, add your chopped onion, cucumber, tomato, green chilli, grated raw mango, and fresh coriander.
  • Add Flavour Boosters: Add the freshly grated coconut to the bowl. Sprinkle in a pinch of chaat masala, salt (or black salt), and a little powdered sugar to balance the tanginess.
  • Mix Well: Gently toss everything together until the ingredients and seasonings are completely combined.
  • Add Crunch (Optional): If you prefer extra texture, mix in a little roasted peanut powder just before serving.
