Ingredients
  

  • 1 bowl freshly chopped spring onions green and white parts
  • 1/4 cup fresh coriander leaves
  • 7 to 8 fresh mint leaves optional, but highly recommended
  • 3 garlic cloves
  • 3 green chillies adjust to your spice preference
  • 1/2 teaspoon cumin seeds jeera
  • 1/2 teaspoon lemon juice
  • 2 tablespoons roasted peanuts
  • Salt to taste
  • For Optional Tempering Tadka:
  • 1 tablespoon oil
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida hing

Instructions
 

  • Wash the greens: Thoroughly wash the spring onions, coriander leaves, and mint leaves under cold water, then drain any excess water.
  • Fill the blender jar: In a small mixer grinder jar, add your chopped spring onions, coriander, mint leaves, garlic cloves, and green chillies.
  • Add flavourings: Add salt to taste, 1/2 teaspoon of cumin seeds, lemon juice, and the roasted peanuts to the jar.
  • Pulse to blend: To get the best texture for this quick spring onion chutney, do not run your mixer continuously! Use the pulse setting—turn it on and off 2 to 3 times for a few seconds. You want a coarse, crushed texture, not a smooth paste.
  • Prepare the tempering (optional): Heat oil in a small pan. Add cumin seeds and let them splutter, then add the asafoetida (hing).
  • Mix and serve: Pour the hot oil mixture over your prepared chutney and mix well. Your quick and delicious chutney is ready!
