- 1 tablespoon cooking oil
- 1 spicy green chilli slit down the middle
- 3 to 4 long light green chillies (mild variety, cut into 3 pieces each and slit)
- 1/2 teaspoon regular salt or to taste
- 1/4 teaspoon black salt kala namak
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon cumin-coriander powder jeera-dhaniya powder
- Juice of 1/2 lemon about 1 to 1 1/2 teaspoons
Heat the Pan: Place an iron griddle (tawa) or a heavy-bottomed pan on the stove and add your cooking oil. Let the oil get hot.
Add the Chillies: Carefully drop in the slit spicy green chilli first, followed by the chopped, light green mild chillies.
Roast for a Char: Sauté the chillies on medium heat for about 1 to 2 minutes until they develop beautiful dark charred spots on the skin.
Season with Salts: Reduce the gas flame to low. Add the regular salt and the black salt. Black salt is the secret ingredient that gives this Tangy Green Chilli Side Dish its signature taste.
Mix in the Spices: Toss in the garam masala powder and the cumin-coriander powder. Stir everything together nicely and sauté for about a minute on a low flame.
Squeeze the Lemon: Finally, squeeze the juice of 1/2 a lemon directly over the cooked chillies. Use your spatula to press down on the chillies slightly, making sure they are well-coated in all the spices and juices.
Store and Serve: Turn off the heat. You can serve this flavorful side immediately or store it in a jar for later.
