Clean the Sukat and roast it for 2-3 minutes.
Wash the Sukat thoroughly with water 2-3 times.
Make a paste of green chillies, ginger, and garlic.
Chop the tomatoes.
Heat oil in a pan, and add mustard seeds, cumin seeds, and curry leaves.
Add chopped onions and saute until golden brown.
Add the ginger-garlic-chilli paste and saute for 2-3 minutes.
Add chopped tomatoes and cook for 2 minutes.
Add turmeric powder, cumin-coriander powder, and garam masala. Mix well.
Add salt to taste and mix well.
Add the washed Sukat and mix well.
Add a little water, cover the pan, and cook on low heat for 10 minutes.
Garnish with coriander leaves and serve hot.
