Soak 1 cup of chana dal in water for 3 hours.
After soaking, drain the water completely.
In a mixer jar, add the soaked dal, green chillies, ginger, garlic cloves, and cumin seeds.
Grind the mixture into a coarse paste, not too fine.
Transfer the paste to a bowl.
Add coriander powder, turmeric powder, sesame seeds, carom seeds, chopped coriander leaves, red chilli powder, cumin seeds and salt to taste. Mix well.
Add chopped spring onion leaves and mix thoroughly, pressing the mixture to release the flavours.
Add rice flour and gram flour, and mix well to form a batter.
Heat oil in a pan.
Drop small portions of the batter into the hot oil and fry on medium heat.
Fry until the pakoras are golden brown and crispy.
Remove the pakoras from the oil and drain them.
Your spring onion leaves pakoras are ready to be served.
