Step 1: Heat a pan on the stove and pour 1/2 ladle of oil into it. Let the oil heat up well.
Step 2: Add 1/2 teaspoon of cumin seeds and let them crackle.
Step 3: Add 6 to 7 coarsely crushed garlic cloves. Fry them lightly until they turn a golden colour to enhance the flavour of your Quick Methi Chi Bhaji.
Step 4: Mix in 1 chopped medium onion and sauté until it becomes soft and translucent.
Step 5: Stir in 4 crushed green chillies and fry them well with the onion and garlic mixture.
Step 6: Add 1 small chopped tomato and cook until it becomes slightly soft.
Step 7: Carefully add the fresh methi leaves. If the bunch is too big, add a little at a time and stir so it wilts down easily.
Step 8: Let the leaves release their natural water and reduce slightly. Then, add salt to taste. Adding salt later prevents the Methi Chi Bhaji recipe from releasing too much excess water.
Step 9: Cook on medium heat for 2 minutes, stirring occasionally so the tender stems cook properly.
Step 10: Once the moisture reduces, add 4 tablespoons of coarsely ground roasted peanut powder and mix everything perfectly.
Step 11: Cook for another 2 minutes until the remaining water dries up completely. Your Quick Methi Chi Bhaji is now ready to serve!
