Ingredients
  

For the filling:

  • 1 Cup of Roasted gram dal
  • 1 tsp of chat masala
  • 1 tsp of coriander powder or whole coriander seeds, lightly heated
  • Salt to taste
  • 4 Roasted Green Chilli Less Spicy
  • 3 Roasted Green Chilli Spicy
  • 1/2 tsp of roasted cumin seeds
  • 9-10 roasted garlic cloves
  • 1/2 inch of ginger roasted, thinly sliced
  • mint leaves optional
  • A handful of coriander leaves including thin stems
  • 20-25 curry leaves

Wheat flour dough

Oil, butter, or ghee for cooking

Instructions
 

  • In a mixer grinder, combine the roasted gram dal, chat masala, coriander powder, and salt. Grind the mixture once.
  • Add the roasted green chillies, roasted cumin seeds, roasted garlic cloves, and roasted thinly sliced ginger to the mixture.
  • Add the mint leaves, coriander leaves, and curry leaves.
  • Grind everything together until it's well combined and crumbly.
  • Take small portions of the filling and shape them into balls.
  • Take a ball of wheat flour dough and make a cup shape with it.
  • Place a filling ball inside the cup-shaped dough.
  • Close the dough around the filling, sealing it completely.
  • Dust your rolling surface with wheat flour.
  • Gently roll out the paratha evenly.
  • Heat a griddle and add oil, butter, or ghee.
  • Place the paratha on the hot griddle.
  • Cook on medium flame until golden brown and crispy, flipping once.
  • Serve the parathas with chutney or tomato sauce.
