Wash, wipe and cut 300-350 grams of Bhindi (Okra).
In a mixer jar, add coriander leaves, mint leaves, green chillies, garlic, and roasted peanuts and grind coarsely.
In a pan, heat 1 spoonful of oil, add mustard seeds, cumin seeds, and curry leaves.
Add the coarsely ground mixture and saute for 2 minutes.
Add turmeric powder and mix well.
Add the Bhindi (Okra) and mix well.
Cook on medium heat for 2 minutes, stirring occasionally.
Add salt and cook for another 2 minutes.
Cover and cook on low heat for 5-7 minutes.
Add lemon juice or dry mango powder and mix well.
