Wash and cut the potatoes.
Heat oil in a pan, then add butter and let it melt.
Add curry leaves and saute.
Add the potatoes and saute on medium heat for 2-3 minutes.
Cover and cook on low heat for 2-3 minutes.
Remove the lid and continue to saute on medium heat.
Push the potatoes to the side of the pan and add garlic and green chillies. Saute until they are cooked.
Mix the garlic and chillies with the potatoes.
Add salt and mix well.
Add chat masala and mix well.
Add coriander leaves and mix well.
Optionally, add Kashmiri chilli powder for colour and mix well.
Continue to cook on low heat, stirring occasionally, to allow the flavors to meld.
The masaledar potatoes is ready to serve.
