In a bowl, combine grated raw potato, fenugreek leaves, coriander leaves, grated boiled potatoes, ginger-garlic-chilli paste, asafoetida powder (hing), carom seeds (ajwain), sesame seeds, cumin-coriander powder, garam masala, and turmeric powder. Mix well.
Add wheat flour and gram flour.
Add salt and mix thoroughly without adding water initially.
Add water gradually to form a stiff dough.
Take a portion of the dough and roll it out thinly.
Heat an iron tawa or pan and grease it with oil.
Place the rolled dough on the hot tawa and cook until golden brown on both sides, pressing to ensure even cooking.
Serve hot with yogurt, tomato sauce, chutneys, or pickles.
Optionally, add 2 spoons of ghee or oil to the dough.
