Making perfect Khapli Wheat Kheer is easy. This simple recipe guides you to a healthy, delicious, and creamy dessert using Emmer wheat.

- 1 Cup Emmer Long Wheat / Khapli Wheat / Khapli Gahu
- 4 Cup Water
- Salt
- 1 Cup Hot Water
- 1 Cup Jaggery
- Almonds as per preference
- Cashew Nuts as per preference
- 1 tbsp Ghee as per preference
- 1/2 tbsp Sugar, Cardamom Powder
Preparation of Emmer Long Wheat (Khapli wheat):
Wash the wheat thoroughly with water.
Soak the washed wheat in water for at least half an hour.
Drain the water from the soaked wheat.
Cooking the Emmer Long Wheat (Khapli wheat):
Transfer the soaked wheat to a pressure cooker.
Add four cups of water for every cup of wheat.
Add a pinch of salt to the cooker.
Close the pressure cooker and cook for 5-6 whistles.
Once the pressure is released, open the cooker.
Mash the cooked wheat slightly with a spoon.
Making the Kheer:
Add one cup of hot water to the cooked wheat and mix well.
Add one cup of jaggery to the cooker and mix until it dissolves completely.
Add chopped cashews and almonds to the cooker.
Add a generous amount of ghee to the cooker and mix well.
Place the cooker on the stove and cook on medium flame for 5-7 minutes, stirring occasionally.
Add a little sugar and cardamom powder to the kheer and mix well.
Cook for another few minutes until the kheer thickens.
Turn off the gas and let the kheer cool down a bit before serving.
The delicious Emmer Long Wheat Kheer (Khapli Gavhachi Kheer) is ready to be served.
