Crispy Alu Vadi Recipe

Ingredients
  

Paste:

  • 7-8 Green Chilli
  • 1/2 Inch Ginger
  • 9-10 Garlic Cloves
  • 1 tsp Cumin Seeds
  • 1 tsp Coriander Powder
  • 1 tsp Ajwain
  • 1/2 Cup of Coriander Leaves

Alu Leaves Vadi / Colocasia Leaf Vadi:

  • 1/4 tsp Turmeric Powder
  • 1 tbsp Sesame Seeds
  • 1 tbsp Rice Flour
  • A Pinch of Hing / Asafetida
  • Salt to taste
  • Water
  • 1 Cup of Besan / Gram Flour
  • 1 tbsp Lemon Juice
  • Oil
  • 6 Colocasia leaf / Alu Leaves / Patra Leaves

Instructions
 

  • In a mixer jar, add chillies, ginger, garlic, cumin seeds, coriander powder, ajwain, and coriander leaves and grind them.
  • Take the ground mixture in a bowl and add turmeric powder, white sesame seeds, rice flour, asafoetida powder, salt, a little water and gram flour to it.
  • Mix the ingredients well.
  • Add lemon juice and mix well.
  • Take a colocasia leaf and remove the thick veins from the centre. Gently flatten them with a rolling pin and apply the mixture on it.
  • Add another colocasia leaf on top of the mixture and apply the mixture on it.
  • Add another colocasia leaf on top of the mixture and apply the mixture on it.
  • Fold the sides of the leaves to form a roll.
  • Put the roll in a steamer and steam it for 15 minutes.
  • Take the roll out of the steamer and let it cool.
  • Cut the roll into pieces.
  • Heat oil in a pan and fry the pieces until they are crispy.
  • The fried pieces are now ready to be served.
