We eat many types of dals daily. Then I thought, since it’s summer, let’s make dal using raw mango (kairi), because summer is the season for raw mangoes, and they are easily available in the market. I made this raw mango dal using my secret method, and it turned out very delicious. You should definitely try making it, you will also love its taste. The recipe is quick and requires few ingredients. The recipe is written below.
Ingredients:
- 1 Cup Toor Dal (1 hr Soaked)
- Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- A pinch of Hing powder (asafoetida)
- 1 Bay Leaf
- Curry Leaves
- 1 Onion Chopped
- (1 Green Chilli, 1/2 Inch Ginger, 6-7 Garlic Cloves, Dry Coconut) Paste
- 1 Tomato Chopped
- 1/4 tsp Turmeric Powder
- Small pieces of raw mango (Kairi)
- 1 tbsp Kanda Lasun Masala
- 1 tsp Garam Masala Powder
- Coriander Leaves
- Salt to taste
- Warm water as needed
- A small piece of jaggery

Instructions:
- Soak the Toor dal, then rinse it well.
- Heat oil in a pressure cooker. Add mustard seeds and cumin seeds. Let them splutter.
- Add hing powder, bay leaf, curry leaves, chopped onion and saute until it turns lightly golden.
- Add (1 Green Chilli, 1/2 Inch Ginger, 6-7 Garlic Cloves, Dry Coconut) Paste. Saute for a couple of minutes.
- Add the chopped tomato and cook for about a minute until it softens slightly.
Add the turmeric powder and mix well. - Add the raw mango pieces and mix well.
Stir in the Kanda Lasun Masala, garam masala powder, and chopped coriander. Mix well. - Add the rinsed Toor dal and salt to taste.
- Add warm water according to your desired consistency for the dal.
- Add the piece of jaggery and mix everything well.
- Close the pressure cooker lid and cook for three whistles on low heat.
- Let the pressure release naturally before opening.
- Your Kairi Dal is ready to enjoy!.
Additional Tips :
- You can substitute Toor dal with a mix of moong dal and masoor dal.
- Adding a potato can enhance the taste.
- You can also add chana dal (split chickpeas).
