Every time we wonder why the Anda Masala served in hotels tastes so amazing. When we try to make Anda Masala at home, it doesn’t taste like the hotel version. After making Anda Masala at home many times, I finally achieved that taste. I have shared its recipe with you, do try it. You will definitely love this recipe. Hotel Style Egg Masala.
Ingredients:
- 1 dozen (12) boiled and peeled eggs
Hirva Masala (Green Masala) :
- 1 Cup Coriander Leaves
- 2 Green Chilli
- 1 Inch Ginger
- 10-12 Garlic Cloves
- Water
Whole spices:
- 1 small star anise
- 1 Black Cardamom
- 3 small bay leaves
- 4 Cloves
- Cinnamon Stick (1 Inch)
- 2 Green Cardamom
Other Ingredients :
- Oil
- 3 Onion Chopped
- Hirva Masala (Green Masala)
- Tomato Paste (2 Tomatoes)
- 1/4 tsp Turmeric Powder
- 1 tsp Coriander Seeds Powder
- 1 tbsp Red Chilli Powder
- Salt to taste
- 2 tbsp Egg Curry Masala
- 3 tbsp Fresh Curd / Dahi
- Warm Water

Instructions:
- Heat oil in a pan, add whole spices and saute.
- Add chopped onions and saute until golden brown.
- Add the prepared green paste and saute for 1-2 minutes.
- Add tomato paste and cook for 2-3 minutes until the oil separates.
- Add turmeric powder, coriander powder, chilli powder, and salt. Mix well and cook until the oil separates.
- Add Everest Anda Masala and mix well.
- Reduce the heat to low, add fresh yogurt, and mix thoroughly.
- Add a little warm water and mix well.
- Cover and simmer for 5-7 minutes on low heat.
- Make slits in the boiled eggs and gently add them to the masala.
- Cover and simmer for another 5 minutes.
- Add warm water to achieve the desired gravy consistency.
- Simmer uncovered for 10-15 minutes on low heat, allowing the flavours to meld and the gravy to thicken.
- Garnish and serve hot.
