Instant Potato Recipe For Tiffin

I make this potato recipe (batatyachi bhaji) for the kids' tiffin. It tastes great and is also very easy to make.

Ingredients
  

  • Oil
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • Curry leaves
  • 2 green chillies slit
  • 2 medium-sized onions sliced
  • 3 cloves of crushed garlic
  • A pinch of asafoetida hing
  • 1/4 tsp turmeric powder
  • 1 medium-sized tomato roughly chopped
  • Salt to taste
  • 3 medium-sized potatoes peeled and chopped
  • 1/2 tsp cumin-coriander powder coarsely ground
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • Coriander leaves

Instructions
 

  • Heat oil in a pan and add mustard seeds. Once they crackle, add cumin seeds, curry leaves, and green chillies.
  • Add sliced onions and saute for a couple of minutes until lightly golden.
  • Add crushed garlic cloves, asafoetida (hing), and turmeric powder. Mix well and saute for a minute.
  • Add the roughly chopped tomato and cook for two minutes.
  • Add salt to taste and mix well.
  • Add the potato pieces and mix well.
  • Cover the pan with a tight-fitting lid and cook on low heat for 5-7 minutes, or until the potatoes are cooked through.
  • Add cumin-coriander powder, chilli powder, and garam masala. Mix well.
  • Add coriander leaves and mix well.
  • Cover and cook on low heat for another 5-7 minutes to allow the flavors to meld.
