Ingredients:
- Oil
- 1 tsp mustard seeds
- 1/2 tsp cumin seeds
- Curry leaves
- 2 green chillies, slit
- 2 medium-sized onions, sliced
- 3 cloves of crushed garlic
- A pinch of asafoetida (hing)
- 1/4 tsp turmeric powder
- 1 medium-sized tomato, roughly chopped
- Salt to taste
- 3 medium-sized potatoes, peeled and chopped
- 1/2 tsp cumin-coriander powder, coarsely ground
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala powder

Instructions:
- Heat oil in a pan and add mustard seeds. Once they crackle, add cumin seeds, curry leaves, and green chillies.
- Add sliced onions and saute for a couple of minutes until lightly golden.
- Add crushed garlic cloves, asafoetida (hing), and turmeric powder. Mix well and saute for a minute.
- Add the roughly chopped tomato and cook for two minutes.
- Add salt to taste and mix well.
- Add the potato pieces and mix well.
- Cover the pan with a tight-fitting lid and cook on low heat for 5-7 minutes, or until the potatoes are cooked through.
- Add cumin-coriander powder, chilli powder, and garam masala. Mix well.
- Add coriander leaves and mix well.
- Cover and cook on low heat for another 5-7 minutes to allow the flavours to meld.
