Quickly made Masaledar Vangi (Spicy Brinjal). Whenever I buy brinjals from the market, I definitely make this brinjal recipe because it is easy to make and gets ready quickly with fewer ingredients. It tastes very good and the family members also eat it with liking. You can also make this recipe for tiffin.
Ingredients:
- 5 Brinjal / Baigan Chopped
- Oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- Curry Leaves
- 2 Onion Chopped
- A Pinch Hing / Asafetida
- 1/4 tsp Turmeric Powder
- (Dry Coconut, 1 Green Chilli, 4 Garlic Cloves, 1/2 Inch Ginger) Paste
- 1 Tomato Chopped
- Salt to taste
- 1 tbsp Kanda Lasun Masala
- 2 tbsp Roasted Peanuts Powder
- 3 tbsp Water

Instructions:
- Heat oil in a cast iron pan.
- Add mustard seeds, cumin seeds, and curry leaves.
- Sauté the chopped onions until they turn golden.
- Add hing powder and turmeric, saute this well.
- Add ginger, garlic, green chilli, and dry coconut then saute this well.
- Add the tomato and cook briefly.
- Add salt, kanda lasun masala and groundnut powder then saute this well.
- Add the chopped brinjals and mix well to coat them with the masala.
- Add 3-4 tbsp of water and mix well then cover the pan, and let it cook on low or medium heat.
- Cook for about 15 minutes, stirring occasionally, until the brinjals are tender.
- Your Masaledar Vangi is ready to enjoy!.
