Ingredients:
- 200 gm Poha (flattened rice)
- Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- Curry Leaves
- 1 Medium-sized Onion Chopped
- 2 Green Chilli Chopped
- 1/4 tsp Turmeric Powder
- 2 tbsp Roasted Peanuts
- 1 Tomato Chopped (Small Size)
- 1 Medium Cucumber (Peeled & Grated)
- 1 tbsp Raw Mango Grated
- Salt to taste
- 1 tsp Sugar
- Coriander Leaves
- 2 tsp Lemon Juice

Instructions:
- Rinse the poha and let it soak until softened, then drain and set aside.
- Heat oil in a pan, add mustard seeds, cumin, and curry leaves.
- Add chopped onions and saute until golden brown.
- Add green chilli and saute for 2-3 minutes.
- Add turmeric powder and mix well.
- Add roasted peanuts and saute for 1 minute.
- Add chopped tomato and saute for 1 minute.
- Add Cucumber and mix it well.
- Add raw mango and mix it well.
- Add salt to taste and mix it well.
- Add sugar and mix it well.
- Add coriander leaves and mix it well.
- Add the soaked poha and saute for 2-3 minutes.
- Squeeze lemon juice over the mixture.
- Mix everything thoroughly and serve hot.
