Ingredients:
- 6 eggs
- Salt
- 1/4 tsp Garam masala powder
- 1/4 tsp Red chilli powder
- Coriander leaves
- Oil
- 2 medium-sized finely chopped onions
- 1 tbsp ginger, garlic, and green chilli paste
- 1/4 tsp turmeric powder
- 1 large, finely chopped tomato
- 1 tbsp garam masala powder
- 1 tbsp cumin-coriander powder
- 1 tbsp Kolhapuri masala (or any other masala like Kanda Lasun Masala)
- 1,1/2 glass of Water

Instructions:
Prepare the Egg Bhurji:
- Crack the eggs into a bowl and add salt, garam masala, red chilli powder, and coriander leaves. Mix it well.
- Heat oil in a pan and add the egg mixture.
- Cook, stirring occasionally, until the eggs are well-cooked and slightly scrambled.
- Set aside.
Prepare the Curry Base:
- In the same pan, add more oil.
- Add the chopped onions and saute until golden brown.
- Add the ginger-garlic-green chilli paste and saute for a minute.
- Add turmeric powder and mix well.
- Add the chopped tomato and cook for 2 minutes.
- Add garam masala powder, cumin-coriander powder, and Kolhapuri masala.
- Saute for a minute.
- Add salt and the prepared egg bhurji to the pan.
- Mix well and cook for a couple of minutes.
- Add coriander leaves and mix well.
- Add warm water, adjusting the quantity to your desired consistency.
- Bring to a simmer and cook for 5-7 minutes on low heat, stirring occasionally.
