Ingredients
  

  • 300 g Dodka / Ridge Gourd
  • Paste: Coriander Leaves, 8-9 Garlic Cloves, 6-7 Green Chilli
  • Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • A Pinch of Hing / Asafetida
  • Curry Leaves
  • 1 Onion Chopped
  • 1/4 tsp Turmeric Powder
  • 1 Tomato Chopped
  • Salt to taste
  • 6-7 tbsp Moong Dal / Split yellow lentils soaked for 30 minutes to 1 hour

Instructions
 

Prepare the Ridge Gourd:

  • Check if the ridge gourd is tender by breaking it.
  • Cut off the ends and clean the ridge gourd.
  • There’s no need to remove the ridges if the gourd is tender.
  • Grate the ridge gourd and do not squeeze out the water.

Prepare the Masala:

  • Coarsely crush the coriander leaves, garlic, green chillies, and cumin seeds in a mortar and pestle or a mixer.

Cook the Vegetable:

  • Heat oil in a pan.
  • Add mustard seeds and let them splutter.
  • Add cumin seeds, asafoetida, and curry leaves.
  • Add chopped onion and saute until golden brown.
  • Add turmeric powder and mix well.
  • Add the prepared masala and saute for 2 minutes on medium heat.
  • Add chopped tomato and mix well.
  • Add salt to taste.
  • Add the soaked moong dal and saute for 2 minutes.
  • Add the grated ridge gourd and mix well.
  • Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally.
  • Your Dodkyachi Bhaji (Ridge Gourd Sabji) is ready to be served.
