Ingredients:
- 300 g Dodka / Ridge Gourd
- Paste: Coriander Leaves, 8-9 Garlic Cloves, 6-7 Green Chilli
- Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- A Pinch of Hing / Asafetida
- Curry Leaves
- 1 Onion Chopped
- 1/4 tsp Turmeric Powder
- 1 Tomato Chopped
- Salt to taste
- 6-7 tbsp Moong Dal / Split yellow lentils (soaked for 30 minutes to 1 hour)

Instructions:
- Prepare the Ridge Gourd:
- Check if the ridge gourd is tender by breaking it.
- Cut off the ends and clean the ridge gourd.
- There’s no need to remove the ridges if the gourd is tender.
- Grate the ridge gourd and do not squeeze out the water.
- Prepare the Masala:
- Coarsely crush the coriander leaves, garlic, green chillies, and cumin seeds in a mortar and pestle or a mixer.
- Cook the Vegetable:
- Heat oil in a pan.
- Add mustard seeds and let them splutter.
- Add cumin seeds, asafoetida, and curry leaves.
- Add chopped onion and saute until golden brown.
- Add turmeric powder and mix well.
- Add the prepared masala and saute for 2 minutes on medium heat.
- Add chopped tomato and mix well.
- Add salt to taste.
- Add the soaked moong dal and saute for 2 minutes.
- Add the grated ridge gourd and mix well.
- Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally.
- Your Dodkyachi Bhaji (Ridge Gourd Sabji) is ready to be served.
