Ingredients:
Fresh Masala:
- 3 tbsp of chana dal
- 1,1/2 tbsp of coriander seeds
- 1 tbsp of cumin seeds
- 2 small pieces of mace
- 1 small star anise
- ½ inch piece of cinnamon
- 2 green cardamoms
- 4 cloves
- 1 small bay leaf
- 7-8 black peppers
- 1 tsp amchur powder
- 1/2 tsp of chat masala
- 1 tbsp red chilli powder
- 1 garlic head (grated & dried)
- 1 inch ginger (grated & dried)
- 1/4 tsp turmeric powder
- A pinch of asafoetida (hing)
- 1 tsp salt
Tasty Batata Bhindi Recipe (Tasty Okra Aloo Recipe):
- 2-3 tsp oil
- 250 gm potatoes, peeled and cut
- Salt to taste
- 250 gm bhindi (Okra), washed and cut
- 1 tbsp Fresh Masala

Instructions:
Preparing the Fresh Masala:
- Dry roast the chana dal until lightly browned, stirring continuously.
- Add coriander seeds and cumin seeds and roast for about a minute.
- Add mace, star anise, cinnamon, cardamom, cloves, bay leaf, and black pepper. Mix well and remove from heat.
- Let the roasted spices cool completely.
- In a mixer jar, combine the cooled spices with amchur powder, chat masala, red chilli powder, dried garlic cloves, dried ginger, turmeric powder, asafoetida (hing), and salt.
- Grind to a fine or slightly coarse powder.
Making the Tasty Batata Bhindi Recipe (Tasty Okra Aloo Recipe):
- Heat oil in the same pan and add the cut potatoes.
- Saute for 2 minutes on medium heat.
- Add a little salt, mix well, cover, and cook on low heat for 5 minutes.
- Remove the potatoes and in the same pan, add the bhindi (okra).
- Saute for 2 minutes on medium heat.
- Add a little salt, mix well, cover, and cook for 5 minutes.
- Remove the lid and saute for another 2-3 minutes until the bhindi (okra) is cooked.
- Add the cooked potatoes back to the pan and mix well.
- Add 1 spoonful of the prepared fresh masala to the vegetables.
- Mix well and cook for another minute on low heat.
- Cover and cook for 5 minutes on low heat to allow the flavours to meld.

Additional Tips:
- For a variation, you can add onions and tomatoes after sauteing the ginger-garlic paste.
