Ingredients:
- 1 Cup dried shrimp
- Water – for washing
- 1 Medium-sized onion (finely chopped)
- Coriander Leaves (with some stems)
- 1 tbsp Tomato Sauce
- 1 tbsp Schezwan Chutney (or green chilli)
- Salt to taste
- 1/4 tsp Lemon Juice
- Optional additions: grated carrot, beetroot, cucumber

Instructions:
- Remove the head and tail of the dried shrimp.
- Heat a cast-iron pan and add the dried shrimp. Roast them on medium heat until they become crispy and change colour to a reddish hue. You should hear a crackling sound.
- Reduce the heat to low and then transfer the roasted shrimp to a bowl. They should be crispy and have a red colour.
- Wash the roasted shrimp with clean water 2-3 times and drain thoroughly.
- Put the drained shrimp back into the same pan (with the gas on low). Saute for a minute or two, stirring occasionally, then increase the heat to high for a short time to make them extra crispy.
- Turn off the gas and let the shrimp sit in the pan for a couple of minutes, stirring occasionally, until they cool down and become very crispy.
- Once cooled and crispy, transfer the shrimp to a serving bowl.
- Add the chopped onion, coriander leaves, tomato sauce, Schezwan chutney (or green chilli), and salt to the bowl.
- Squeeze a little lemon juice into the mixture.
- Mix all the ingredients together thoroughly.
